FAQ
Frequently asked questions
Ordering
Do I need an account to order?
Yes. Chubby Uni is a wholesale-only operation. All new customers must submit a wholesale account application before placing their first order. Once we review and approve your application, you will receive access to our weekly pre-order form and direct contact details.
What is the order cutoff?
Every Sunday at 8:00 PM Pacific Time. Orders submitted after Sunday 8pm will roll over to the following week's shipment. No exceptions — product is committed for packing after cutoff.
What is the minimum order?
Minimum order is 1 full box per product. Boxes contain 132 trays (100g products) or 66 trays (200g products). There is no per-tray ordering.
Can I order mixed grades in one box?
Yes. We accommodate mixed-grade shipments. Mixed orders are handled manually. Sign in to your account and contact us with the grades and quantities you want and we will confirm availability and pricing before your order is finalized.
Do prices include shipping?
No. Prices listed are per tray, product only. Southwest Cargo air freight is charged separately based on your destination airport and total box count. We confirm the shipping cost with you before finalizing every order.
Product & freshness
How fresh is the uni when it arrives?
Very fresh. We pack on ship day (Monday or Tuesday) and your order flies out the same day. You pick it up at the airport that afternoon or evening. Most customers receive uni that is 12–18 hours from packing time.
How is the uni packed and kept cold during shipping?
Every box is packed with gel ice packs and insulated foam lining to maintain proper temperature throughout the flight. Southwest Cargo handles perishables in temperature-controlled cargo holds. The uni stays cold from our packing facility in Los Angeles all the way to the Southwest Cargo counter at your pickup airport.
What is the shelf life?
5–7 days refrigerated from the ship date. Store at 32–35°F (0–2°C). Do not freeze. Do not store near strong-smelling foods. Consume as close to arrival day as possible for peak flavor.
What is the difference between Grade B, A, and AA?
- Grade B — Full-flavored roe with slight variation in tongue size and color. Best for high-volume rolls, poke bowls, uni pasta, and cooked applications.
- Grade A — Uniform golden-amber color, consistent tongue size, clean ocean sweetness. The standard for everyday nigiri and sashimi programs.
- Grade AA — Hand-selected top roe only. Maximum uniformity, deep amber color, intensely sweet and creamy. Ideal for omakase and premium plate presentations.
Is the uni ever frozen?
No. All products we ship are fresh, never frozen.
What species is this?
Red Sea Urchin (Strongylocentrotus franciscanus), wild-caught and diver-harvested from the California and Baja California coastline.
